Chocolate Chia Pancakes Recipe

Coming up is one of my very favourite days, Pancake Day! Any kind of day that celebrates a carb, I am fully on board with.

In recent years we've doubled up to make a meal out of it with a savoury pancake to start and a sweet for pudding, my first choice? Nutella all the way.

This year we've started experimenting early as Joe and I won't be together on Pancake Day, he's going to Italy and New York in the next couple of weeks, rather jealous! We started as we mean to go on, with a pretty hefty stack. These are actually relatively healthy(ish...) so I thought I'd share the recipe for you to try out if you fancy.

  • 60g Oats
  • 15g Cocoa Powder
  • 1 tsp Baking Powder
  • 60g Ripe Banana
  • 125ml Milk (or almond milk)
  • 1 tbsp milled Chia Seeds (I used Linwoods)
  • 1-2 tsp Honey (optional)
  • 1⁄2 tsp Vanilla Extract
Chocolate Chia Seed Pancake Recipe

  1. Add all ingredients into a bowl and whisk. Alternatively, use a blender or a Nutribullet, then it's super easy to pour into the pan.
  2. Heat a non-stick frying pan over a medium heat. Add a bit of butter per pancake to make sure they don't stick.
  3. I used a ladle to measure out the pancake batter so they're all a similar size.
  4. Cook for a minute or so, flip and cook for another minute more until cooked through.
  5. Stack up as many pancakes as you like, we may have gone slightly overboard...
  6. Serve pancakes and top them with whatever you fancy, we went for peanut butter Halo Top ice cream, blueberries and honey!

If you fancy trying a standard pancake recipe, the best rule is 1 cup, 1 cup, 1 egg. So take a cup of plain flour (self raising if you want American style pancakes), 1 cup of milk and and 1 egg, whisk in a bowl and you're good to go. It's the easiest and best recipe, promise!
