A couple of weeks ago I decided to go vegetarian for a week, just to see if I could do it and to attempt to make my daily diet a bit healthier. It was actually surprisingly easy and I kept it going for two weeks, it was only when a chicken, bacon and avocado sandwich tempted me back earlier today, damn it... But, I've decided to keep it up during the week and only have meat when it's too tempting not to, which for a bonafide carnivore like me is pretty good going.
It has meant that I've explored new food (tofu, I mean you) and tried out new recipes so I thought I'd share a couple of them with you this week in case you fancy giving meat a miss.
I used to have smoothies all the time but for some reason they haven't appeared on the menu once this year, but seeing as you can cram in loads of fruit and veg into one glass, it seemed like the ideal option for a veggie snack. This is one of my favourites as it's fruity and filling, perfect for breakfast on the go or as a post gym snack.
Blueberry and Cucumber Smoothie Recipe
- 230ml Almond Milk
- 170g Fresh Pineapple
- 130ml Cranberry Juice
- 115g Fresh Blueberries (plus extra for the topping)
- 2.5tsp Pumpkin Seeds
- Cucumber (to taste and to garnish)
- Chop and peel the pineapple and cucumber, then throw all the ingredients into a blender.
- Blend and serve immediately, garnished with blueberries and slices of cucumber.
- Enjoy, easy peasy!
