Tweet Eats: Avocado, Strawberry and Goats Cheese Salad


It's no secret that I adore avocados, I only discovered this at the start of the year and since then I have consumed a life time supply of them. Recently, this salad has been my favourite form of my beloved fruit and when I posted it on Instagram and twitter people seemed to like the look of it so I thought I'd share the recipe!

It's really simple and pretty healthy (maybe minus the cheese...), perfect for whipping up on a weekday evening or for a weekend lunch.

Ingredients

For the dressing

- Quarter of a red onion
- One salad tomato
- A glug of olive oil
- The juice of half a lemon
- Salt and pepper

For the salad

- A handful of spinach
- One salad tomato
- Cucumber
- One ripe avocado
- Goats cheese (I used St Helens mature goats cheese)

Method

- Prepare the dressing by finely chopping the red onion and the tomato, add to a bowl and mix in the olive oil, lemon juice and seasoning.
- Grab a handful of washed spinach, chop up a tomato and the cucumber, add everything to a serving bowl. Skin the avocado and crumble the feta cheese on top of the salad.
- Pour the dressing over the salad and mix thoroughly so it coats all of the leaves.
- Enjoy!
